Bakers constantly debate the best way to mix dough. Two dominant methods for incorporating water and flour before the main mix are autolyse and fermentolyse. Both techniques aim to improve dough structure and extensibility, but they approach the goal differently and have distinct effects on hydration and fermentation schedules.

The Traditional Autolyse

Raymond Calvel developed the autolyse technique in France to improve the quality of baguettes. A true autolyse involves mixing only flour and water until no dry spots remain. The dough then rests for 20 minutes to several hours before the baker adds the salt and the leavening agent.

During this rest period, two critical processes occur. First, the flour fully hydrates. The proteins gliadin and glutenin begin linking together to form gluten entirely on their own, without any mechanical kneading. Second, protease enzymes begin degrading the gluten slightly, which increases the dough’s extensibility. This makes the dough much easier to stretch and fold later.

Because salt tightens gluten and slows hydration, it is strictly excluded from a true autolyse. Because yeast or sourdough starter begins fermentation and acidifies the dough, it is also excluded. The autolyse is a pure hydration and enzyme activation phase.

The Fermentolyse Method

A fermentolyse is a modified approach where the baker mixes the flour, the water, and the sourdough starter (or yeast) together at the beginning. Only the salt is withheld for a later addition.

This method became popular in modern sourdough baking for practical reasons. Sourdough starter contains both flour and water. If you are mixing a stiff dough, it can be physically difficult to incorporate the starter evenly after a long autolyse has already developed a strong gluten network.

Mixing the starter in with the initial water and flour ensures perfect distribution. However, because the starter is present, fermentation begins immediately. The resting phase is no longer just about hydration; it is the beginning of the bulk fermentation process.

Impact on Hydration Calculations

When executing a true autolyse with sourdough, you must calculate the hydration carefully. If your formula calls for 1,000 grams of flour, 750 grams of water, and 200 grams of 100 percent hydration starter, you cannot simply mix all 750 grams of water with the 1,000 grams of flour.

The starter is going to add 100 grams of water later. If you use all the formula water in the autolyse, the dough might become too wet to handle once you mix in the liquid starter. You often need to reserve a small portion of the water (usually 20 to 50 grams) to help dissolve the salt and incorporate the starter after the autolyse is complete. This is known as bassinage.

With a fermentolyse, hydration is simpler. You mix all the flour, all the water, and all the starter at once. You only need to reserve a tiny amount of water to help dissolve the salt later.

When to Use Which Technique

Choosing between autolyse and fermentolyse depends on your flour and your schedule.

Choose Autolyse When: You are working with high percentages of whole wheat or fresh milled flour. The bran needs a long time to soften without the competing acidity of the starter. You are using very strong bread flour that yields an overly stiff, elastic dough. The pure enzyme action of a true autolyse will relax the dough and make it extensible. You want absolute control over your fermentation timeline. Since no starter is present, the autolyse rest period does not count toward your bulk fermentation time.

Choose Fermentolyse When: You are baking a standard white flour sourdough and want to save time. You are mixing by hand and want to ensure the starter is completely and evenly distributed without fighting a developed gluten network. Your kitchen is very cold. The immediate introduction of the starter gives fermentation a head start.

Both methods produce excellent bread. The key is understanding how each technique influences the water absorption and the fermentation clock.
