Pushing bread hydration past 80 percent changes everything. The dough ceases to behave like a solid and acts more like a thick fluid. If you try to handle a high hydration dough using standard kneading and shaping techniques, you will end up with a sticky mess covering your hands and your workbench.
Success with wet dough requires a shift in methodology. You must rely on tension, temperature, and specific hand movements rather than raw force and extra bench flour.
Building Structure Early
You cannot shape a high hydration dough if you failed to build structure during the bulk fermentation. A wet dough requires more folds than a stiff dough.
Coil folds are the most effective technique for wet dough. Instead of stretching the dough from the top, you reach under the center of the dough mass with wet hands, lift it straight up until the ends release from the container, and let it fold under itself. Rotate the container and repeat.
This lifting action builds tension evenly without tearing the delicate gluten network. Perform three to five sets of coil folds during the first two hours of bulk fermentation. By the end of the folding phase, a dough that started as a puddle should hold its shape and pull cleanly away from the sides of the tub.
The Role of Water on Your Hands
The most common mistake beginners make is aggressively flouring their hands and the workbench during the folding stage. Incorporating raw flour into the dough mid-fermentation causes dry, unfermented streaks in the final crumb.
Keep your hands wet. Water acts as a barrier between your skin and the sticky dough. Keep a small bowl of water next to your workstation. Dip your fingers before every fold. The dough will slip right off your hands.
Only introduce flour at the very end of the process, right before dividing and shaping.
Temperature Control
Warm dough is sticky dough. Cold dough is manageable dough.
Professional bakers carefully control the final dough temperature to ensure the dough remains manageable during shaping. If you struggle to shape wet dough, try lowering your water temperature during the initial mix to keep the dough cooler.
Alternatively, you can utilize the refrigerator. After the bulk fermentation is complete, place the dough in the fridge for 30 to 60 minutes before dividing and shaping. The cold firms up the starches and makes the dough significantly less tacky. This technique, sometimes called a cold retard before shaping, is highly effective for hydration levels above 85 percent.
Bench Knife Technique
A metal bench knife (or bench scraper) is mandatory for handling wet dough. Your hands are warm and textured, making them a magnet for sticky dough. A bench knife is cool, smooth, and precise.
When dividing the dough, use the bench knife to make clean, decisive cuts. Do not saw or drag the blade.
During shaping, use the bench knife to move the dough. Slide it quickly under the dough mass to lift and flip it. When rounding a boule, use the edge of the bench knife against the base of the dough to push it slightly, creating tension across the top surface. The less you touch the dough with your actual hands, the better.
The Stitching Method
When shaping a batard (an oval loaf) at high hydration, standard rolling techniques often fail to create enough tension. The dough just flattens out.
The stitching method solves this. After doing the initial folds to form a loose cylinder, you take the edges of the dough and pull them across the center, alternating left and right, exactly like lacing a shoe or stitching a seam.
This interlocking action pulls the outer skin of the dough incredibly tight. Once you have stitched the entire length of the loaf, you gently roll it over so the seam is face down. The surface tension created by the stitches will hold the wet dough in a tall, tight shape as it goes into the proofing basket.
